

So, I'm always looking for new recipes to try. I recently had been seeing this thing called Quinoa. I had never tried it, but it's supposed to be really good for you & high in protein. I personally like grainy things like it, like really nutty brown rice. So I bought a bag of this Quinoa at Vitamin Cottage and then was searching for recipes. I came across this: Delicious Big Bowl Quinoa Recipe. The picture was just so enticing to me, I just had to try it. So today I made it. I happen to have sweet potatoes on hand so I decided to use one of those instead of a regular potato because they're healthier (& I have to put a bathing suit on soon) and I think they're YUMMY.
So I am happy to report that it was DeLicioUs & NuTritiOus and filling too! I would definitely recommend it, if you're brave enough to try something new, and if you don't mind a meatless meal. :)

I am glad to hear about this! I am always looking for new options for cooking healthy and I have been slightly intimidated by that ingredient (can't remember how in the heck to spell it!). Now I will have to give it a try, thanks!
