Home with my Girl




Monday


Today I decided to extend our weekend by one day.

Imani had the start of a cold this weekend and it had moved into her chest this morning. We also woke up to SNOW. Which is normal for Winter I suppose, but is a total drag after having 70 degree weather for several days last week!

So I decided to let Imani stay home from school. She hasn't missed any days of school so far. She definitely was well enough to go to school, but I decided to let her stay home & rest & spend time with Mom.

Well, it's really hard for her to just lay around & do nothing. She'd have to be REALLY sick to do that. So after about 45 minutes of laying in bed & watching TV with me, she decided she wanted to "do a project" or bake something. So she started pulling out cook books to find something to make. She likes to pretend she is on a cooking show. :) So she found a recipe for: Cherry Almond Chews. We had all the ingredients so I agreed. We made them with pecans which are optional, and they are really good!
She hadn't quite satisfied her urge for baking yet, so I looked up a recipe for beer bread, something I haven't had since I was KiD. I found the recipe here:Whole Wheat Beer Bread by Farmgirl Fare. The bread is good, but I think it would be best to have with a nice soup or something for dipping.

At one point we looked out the window today & the snow coming down looked like glitter. Something about how fine the snow was and the way the sun was hitting it. (YES, I said sun, it is COLORADO after all!) Imani said God was up there pouring glitter on us. :)
Overall, it was a nice, quiet day at home with my favorite GiRl!
